Staying on track and pancakes

So I survived my first week of school.  However, at the end of the week I felt like I had been in school for a month.  All my classes took off running.  Time to brag on myself a little bit…  I have not procrastinated a single assignment so far.  I know that isn’t hard for some, but I am a last minute kind of girl.  Not only am I staying on top of my assignments, I am getting ahead on things that will help me with tests like writing out vocabulary.  Today, definitely felt like a Monday.  I originally had plans to go to Wal*Mart after school, but when I left my last class, I was physically and mentally exhausted.  I came home, got in some comfy lounge clothes, and curled up on the couch for about an hour. 

This weekend, I went to Heber Springs for a little get away with Tyler.  My first morning there, I went to the continental breakfast and instead of finding the common waffle maker I found a pancake maker.  It was awesome!!  I love pancakes, and I found it just amazing that I could push a button, and it would make a fresh pancake.  All I had to do was catch it.  :) I sent my dad a picture because yes I was that excited and he called me his little redneck girl.  I am easily amused.  :)

In my last blog, I mentioned that I made 3 cheese chicken alfraedo bake.  It was delicious and because I made so much, I was able to eat on it ALL week.  Anyways, it was taking forever to cool, so I rigged up a cooling system to cool it quicker.  I took 2 Tupperware containers, turned them upside down, and placed the casserole on top.  It worked.

Baking and Organizing

The week is halfway over and I am still kicking.  :)  Tyler and I will be moving to a 1 bedroom apartment in just a few weeks.  We are real excited for the move, but I am a little nervous about moving from a 3 bedroom to a 1 bedroom.  I have been trying to come up with ideas on how to stay clean and organized.  I need them to be simple enough, or I will lose motivation quick.  Anyways,  I know that I want to buy some kind of baskets that can be labeled and put in a closet for things like crafts, wrapping stuff, and misc.  Our mail is the one thing that I need the most help with.  I have file folders for it, but very rarely do I put the mail in them.  If you have any ideas on how to help me with any organizational tips or tricks, fill free to comment.  This week, I have been staying on top of all my homework for business stats.  I don’t think it will be too difficult this semester as long as I don’t procrastinate.  I have noticed though that it takes me a little time to comprehend what is going on.  I made a calendar for September that I am hoping will keep me organized.  If it works then I think I will continue making them.

On to a different note, I made 3 cheese chicken alfraedo bake.  It was really yummy.  However, I made way too much and I can’t freeze it because I read somewhere you can’t freeze a casserole with sour cream in it. 

3 Cheese Chicken Alfraedo Bake

This is what I used, but I altered the recipe a little bit.  It called for chopped parsley and I didn’t have any.

  • 16 oz elbow macaroni
  • 16 oz alfraedo sauce
  • 8 oz sour cream
  • 15 oz ricotta cheese
  • 3 cps chopped, cooked chicken (I bought a package of chicken strips, boiled, and shred them.  So I didn’t measure out my chicken.)
  • 2 eggs ---> lightly beaten
  • 1/4 cp grated parmesan cheese
  • 2 cps mozzarella cheese

 

Directions:

  • Fix the pasta, drain, and return to pot
  • Boil and shred chicken 
  • Stir together all ingredients except mozzarella
  • Spread in a 9x13 baking dish (I didn’t have this size, so I just used the biggest one I had.)
  • Sprinkle on mozzarella
  • Bake at 350 degrees for 30 minutes or until bubbly

New School Year

It’s that time again.  I started yet another school year at college.  This is my 4th fall semester in college and my 2nd at HSU.  I have finally settled on my major of dietetics and look forward to completing my degree.  I will (if everything goes as planned) 1 more year after this school year.  However, I won’t be completely finished until I finish my internship after graduation.

Today, I had 3 classes.  I started with my business stats class.  The teacher is from Oden,  Hopefully that gives me a little edge.  However, when I was skimming through the book it all looks like gibberish to me.  :)  Cue the freaking out.  I think there will be some emotional break downs because of this class.  I have already done some vocabulary for chapter 1 and I still need to complete the homework due Wednesday.   

My other classes today were primarily focused around FCS.  I think they are going to be fun (hopefully).

I had to buy my books today.  I thought I was going to have to sell a kidney to pay for them.  Lucky me…I spent so much today (on 5 books) that I got a free t-shirt and coupon for a free pizza at Domino’s.  On the back of the shirt, it says, “I got used at Reddie or Not Bookstore.”  HAHAHA!!!!  Very appropriate.

I have a meeting in a few hours regarding the Gurdon School District weight loss program.  I am excited about volunteering for this opportunity.  You never know who you are going to meet that will be beneficial in the future.

Primarily Pictures

This weekend, I celebrated my nephew’s 2nd birthday.  It was a lot of fun and there was a great turn out.  Manda and I helped decorate.  We made a streamer wall.  It was my first attempt and turned out perfect.  This year, Tyler and I had no idea what to get Christopher, but then we decided to make him a tie blanket and have his initials put on it.  It turned out great, and I know he loved it.

Summer Days…

So hello there blog world.  I have been MIA lately but it has been worth the little break.  The most exciting thing that has happened is that Tyler and I bought a new toy.

We bought a used Rhino.  We have really enjoyed it so far.  On a first real trip we saw a deer.  She stood on the side of the road.  It was like she wanted her picture taken.

On my first weekend off, Dad took us to the lake.  It was a lot of fun and I was so sore the next day from tubing.

Manda and I threw a yard sale last weekend.  It was a lot of work and I had a couple emotional break-downs, but overall it was a success.  While I was gathering some stuff in my closet at my parent’s house, I ran across some old pictures and found this one.  Tyler had some pretty curly hair back in high school.

Last night, Manda and I played around with some senior photos.  I was bored and wanted to try my hand at photography.  They turned out very well.  This was the outfit that we used.  She looks so good in anything.

Summer is almost over…

It has been extremely HOT here in Arkansas that last few days.  I took this photo in my car the other day at about 5:00.  heatSummer classes are over!!!! I am so proud of myself.  I made A’s in both of my classes.  I will never suffer through another science class during the summer (unless absolutely necessary) ever again.  Fall classes start the 22nd of this month, so I am going to make the most out of the rest of my summer.  I might be a little MIA for the next few weeks while I am off enjoying summer.  I have big plans…yard sale, birthdays, hanging with the family, getting some sun, etc.  However, when I do come back hopefully I will have plenty of pictures to catch up with.

:)

So my life, for the month of July, has been very low key.  I haven’t accomplished much.  The only thing that has kept me from being completely lazy is my chemistry class.  This is my last week, and today we got out super early.  All we had to do was take a quiz and go.  The quiz was pretty tricky but hopefully I made a C. I will have class Tuesday and Wednesday, and then on Thursday all I have to do is take the final.  I think I am going to make it.  I am hoping for a B when this is all over. 

Tyler and I considered going to Texarkana today but in the end we decided against it.  We want our next trip to be productive and Tyler didn’t feel like shopping today.  I have big plans to hit up some the end of summer clearance racks.  I would like a few more shorts, and Tyler needs shorts and shirts. 

We didn’t do much this weekend.  Probably the most blog worthy was that Steph and I made sugar cookies.  We decided to do a practice run before Christopher’s 2nd birthday.  I can’t believe my nephew is going to be 2.  He amazes me every time I see him. 

I was reading some blogs this morning and realized that the majority of the blogs I follow are about moms.  I really need to find some blogs that deal with people like me because the mom blogs can sometimes give me baby fever.  I think out of all the blogs I read there are only 2 bloggers that aren’t moms.

This morning, when I was fixing my breakfast, I realized that I have never mentioned that Tyler and I have two different toasters.  (Wow!!! This is exciting. Ha!!)  Tyler grew up with a toaster oven and I use a “traditional” pop-up toaster.  When we got married we decided that we didn’t really want to learn how to work each other’s, so we got both. 

I am not sure why even bothered blogging today.  I don’t really have any updates and I know when I look back on this in the years to come, this will not be a memorable day.  :)  I think I need to go because I heard my dryer finish.
